Baking a great pizza requires attention to air flow over the pizza, bake time and oven temperature . Too often today the emphasis is put on speed of bake instead of quality of bake.

A quality Pizza is a fully cooked pizza with well developed dough. No two operators have the same recipe, so no two operators will have the exact same oven set up.

At Edge we focus on the highest quality pizza possible in the least amount of time.

This does not always produce the fastest bake but it does produce the BEST BAKE.
